WHAT'S HAPPENING IN SCAVI

Our next meeting will be on Monday, February 6 at 9:30 a.m. at the Bedford Free Methodist Church, 630 R Street, in the basement Fellowship Hall.

Our speaker will be Abbey Kuborn, an OD/MS graduate student at the I. U. School of Optometry. Abbey will tell us about the study being done on autonomous vehicles and how we can help.

Valentine's Day Recipes

Candy Kiss Pretzel Treats

1 16-ounce bag of mini pretzels or waffle pretzels

1 14-ounce bag of Hershey kisses (unwrapped (could probably use dark chocolate kisses for diabetics;

1 17-ounce bag of M & M's (could probably use dark chocolate M & Ms.

Preheat oven to 350 degrees

Place pretzels on nonstick cookie sheet.

Place one Kiss on top of each pretzel.

Bake 2 to 3 minutes or until chocolate is soft but not melting.

Remove from oven and gently press a few M & M's in softened chocolate.

Cool and serve.

Variations: Melt a Rolo candy over the pretzel and top with a pecan for an instant turtle or use other flavors of Hershey Kisses such as mint or peanut butter.

Easy Thin Mints

1 package Andes chocolate mints (unwrapped)

1 1/2 sleeves Ritz Crackers

In a medium microwave-safe bowl, put all Andes mint, and on medium power, nuke them in 15 second increments until they stir smooth. Making sure not to burn the chocolate. Dip the crackers one at a time in the melted chocolate and place them on parchment lined cookie sheet. after you are done pop them in the freezer for 10 minutes.

Sweetheart Trifle

1. ) 1 Chocolate cake mix (German chocolate is good)

Bake as directed and cool.

1 pkg. (10-oz.) peanut butter chips

Mix with ¼ Cup milk and ½ Cup whipping cream. Heat until melted. Remove from heat and add ¼ tsp. vanilla. Cool.

2. ) Mix 2 large Pkg. (1 chocolate/1 vanilla) instant pudding and 3 Cups milk.

3. ) 1 12 oz. Cool Whip

4. ) 4 Nestle Crunch candy bars (1.55 oz. each), crumbled.

5. ) Layer ½ of each in trifle dish, repeat.

Valentine Rice Crispy Treats

1/2 cups Butter

10 cups Crispy rice cereal

9 cups Miniature marshmallows

2 cups Candy Heart (the tiny red spice ones)

Candy Hearts (the ones with messages)

3/4 cups Miniature chocolate chips

Red food coloring

Melt butter and marshmallows; stir until smooth. In a large bowl, mix rice

cereal, candy hearts (spiced tiny red ones) and miniature chips together.

To marshmallow mixture, blend in 2 drops red food coloring, adding more

coloring if necessary to reach desired shade. Add marshmallow mixture to

cereal mixture; stir quickly to combine.

Spread on a large buttered pan; press with buttered hands. While warm,

press on candy heart (with messages) spaced 1 to 1/2-2 inches apart. Refrigerate and cut into squares.

SCAVI MINUTES

South Central Association Of The Visually Impaired (SCAVI) Minutes 1/2/23

Those in attendance were: Doug and Brenda Eads, Loney and Ida Galey, Rita Kersh, Denise Mullis, and Mike and Dolly Sowder.

The focus of the meeting was planning for 2023. One idea is to have a letter writing campaign. Don Koors had done this in the past. He has turned this over to each chapter to do it. In addition to providing information about our group, we will solicit donations. Members will help in providing names and addresses of those we feel might contribute. We would not do the campaign until April or May as many people have given donations over the holidays. Dolly Sowder made a motion that we do a letter writing campaign. Brenda seconded the motion. The motion carried.

This year the joint Convention for Indiana/Ohio will be held in Columbus, Ohio at the Crown Plaza Hotel. The National Convention will be held in Schaumburg IL. It is near Chicago, and will be held July 1-7. If we have a state picnic, we are looking at June 3 or 10, it may be held at McCormick's Creek, near Spencer in Owen County. Depending on whether the state picnic is held in June, our Chapter picnic will be the second or 3rd Saturday in June. When we know of which date, we will contact the Parks Department and let Cindy know to take care of the deposit.

We talked about our brochures and where they should be taken. They included the Eye Center, Dr. Sowder and the new eye physician.

Brenda Eads made a motion to adjourn and Doug seconded it. The motion passed.
