WHAT'S HAPPENING IN SCAVI

Our next meeting will be our Christmas party on Saturday, December 10 at noon at the Bedford Free Methodist Church, 630 R Street, in the basement Fellowship Hall.

We're having a pot luck lunch so bring a side dish or dessert. SCAVI will furnish the meat and drinks, plus the plastic/paper products.

If you'd like to play our "Dirty Santa" game, bring a wrapped gift valued at $10. We're also going to give a prize to the person who is dressed the most Christmassy, so put on your bells and bows!

HOLIDAY RECIPES

Winter Shortbread Cookie Bites!

Ingredients

1 cup unsalted butter, diced in to 1/2" pieces

2/3 cup granulated sugar

1/2 teaspoon vanilla extract

2 1/4 cups all-purpose flour

4 tablespoons sprinkles (I used gray, silver, and blue)

Parchment Paper

Instructions

Place parchment paper in a small baking dish.

2. Using your stand mixer, cream together butter and sugar until well combined. Mix in vanilla extract. Set mixer to low speed and add in flour and mix until combined.

3. Fold in sprinkles. Press dough into the parchment lined pan. Press down with spatula to make sure dough is even. Chill dough in refrigerator 30 minutes.

4. Preheat oven to 350F.

5. Lift dough from pan after refrigerating. Cut into 1/2-inch squares with a knife. Gently press more sprinkles into each square. Place on parchment lined baking sheet about 1/2 inch apart.

6. Bake in preheated oven for 11 minutes. Cool completely on a cookie rack and then transfer to an airtight container and store at room temperature. Makes: About 36 bites

Candied Pecans

To make one pound of pecans:

One egg white

One cup sugar

One teaspoon cinnamon

One half teaspoon salt

Whisk the egg white with a tablespoon of water. This takes about one minute or less. Coat the pecans with the egg mixture. Mix the sugar, cinnamon and salt together. Pour over pecans and stir until they are all coated.

Spread the pecans on a cookie sheet with sides until they are in a single layer. Bake at 300 degrees for 30 minutes. Stir after 15 minutes of baking. Let sit to cool after they are done. Store them in a metal container.

Holiday Sugar Cookies

3/4 cup solid shortening, butter flavored preferred

1 cup sugar

2 eggs

1 teaspoon vanilla

2 1/4 cups all-purpose flour

1 1/2 teaspoon baking powder

1/4 teaspoon salt

In large bowl, combine shortening, sugar, eggs and vanilla. Beat with mixer

on medium until light and creamy. In another bowl, combine flour, baking

powder and salt. Add to creamed mixture, beating on low until well blended.

Cover dough and chill for 1 hour, if desired, for easy rolling. Preheat oven

to 375 degrees. Roll half of dough at a time. Roll out dough on lightly

floured surface to 1/4-inch thickness. Using a cookie cutter, cut in desired

shapes. Place on ungreased baking sheets. Roll leftover pieces. Sprinkle

with colored decorations or leave plain to decorate when cool. Bake for 8 to 10 minutes, or until edges are light brown. (Time will vary with cookie size.) Cool slightly, then remove to cooling rack. Cool completely before decorating.

Makes about 36 cookies.

Snowman Soup

1 envelope hot chocolate mix

3 chocolate Kisses

15 mini marshmallows

1 candy cane

Place ingredients into colored plastic wrap. Write this little poem on paper

and give with ingredients in mug!

Was told you've been real good this year

Always glad to hear it

With freezing weather drawing near

You'll need to warm the spirit

So here's a little Snowman Soup

Complete with stirring stick

Add hot water, sip it slow

It's sure to do the trick!

Makes 1 serving.

Effortless Eggnog

1/2 gallon milk, divided

1 (4 serving size) box instant French vanilla pudding mix

1/2 cup sugar

2 teaspoons vanilla

1/2 to 1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

In large bowl, whisk together 3/4 cup milk and pudding mix until smooth.

Whisk in sugar, vanilla, cinnamon and nutmeg. Stir in remaining milk.

Refrigerate until ready to serve.

Makes 2 quarts.

SCAVI MINUTES

The SCAVI meeting was held on November 7 at 9:30 AM. The meeting was called to order by Cindy Brooking. Our president, Regina Vonderhaar and our secretary, Rich Vonderhaar have relocated to Indianapolis. Those present for this meeting included Cindy Brooking, Doug and Brenda Eads, Ida Galey, Rita Kersh, Mike and Dolly Sowder, James and Karen Veen and Denise Mullis.

Dolly Sowder moved that we accept the October minutes. Brenda Eads seconded it. The minutes were approved.

The balance for SCAVI is currently $4581.38. Recent expenditures include convention fees.

The fee for our Post Office Box will increase to $166 in 2023. It has been paid with the help of American Council of the Blind of Indiana (ACBI). The cost is covered by 50% ACBI and 50% SCAVI. The council does not want to mail any items to homes.

Rita Kersh moved that we accept the treasurer's report. It was seconded by Brenda Eads. It was approved.

For the auction, we are submitting two items that the convention will benefit from and four items that will benefit SCAVI.

We discussed our Christmas Party. It will be December 10 at noon at our usual meeting place. It was suggested that we invite the minister and his wife. Cindy will be bringing drinks and pulled pork. Mike and Dolly will bring paper products and those attending will pitch in additional food.

The annual convention will begin on Friday, November 11 at noon. Cindy reviewed the schedule of events.

Our annual dues are $9. Some members paid at the meeting. Those who haven't paid yet, can bring their dues to the Christmas party.

An election of officers was held. Rita Kersh was elected president. Vice President is Brenda Eads. Denise Mullis is the new secretary. Cindy Brooking retains her position of treasurer. Board members will include Ida Galey for a one year term, Jim Veen for a two year term, and Loney Galey for a 3 year term.

A motion was made to adjourn and seconded. All agreed.
